HOW TO PREPARE OFE OWERRI SOUP



Ofe Owerri is an igbo soup which is very delicious but expensive to prepare. Ofe owerri means Owerri soup (it is a soup that is indigenous to owerri people). This is a very delicious soup, made of assorted meat (different parts of cow meat), dried fish, snail and stock fish. From the soup you will
get the entire food nutrient the body required, it’s healthy, tasty, yummy and delicious.

The ingredient listed below is for a family of four which can go round 2ce. Before you decide to prepare this soup make sure you have up to N5,000 or more with you.


INGREDIENT:
Serve of 4(2ce)
1.       Cow (assorted meat) 1kg
2.        6-10 snails
3.        2 medium sizes of dry fish
4.       Stock fish head (medium size)
5.       crayfish
6.        1 cup of sliced Uziza leaves
7.        4 cups of sliced fluted pumpkin leaves
8.       3 cubes of maggi or knorr
9.        4-5 Cocoyam (medium size)
10.   1 cup of palm oil
11.   1 spoon of ogiri (optional)
12.    Salt and pepper to taste

PREPARATION:

1.       Boil the meat, by adding two cubes of Knorr, sprinkle on top of the meat and allow to boil for 15 minutes until the water is about to dry. Make sure you add enough water and cook the meat until it is tender, add a teaspoon of salt, cover and allow simmering for 5minutes.
2.       While the meat is boiling blend crayfish, wash the stock fish/dry fish with water and set aside in a plate (remove all the bone in the fish), wash the snails with alum or tangerine/grape juice or dry garri in other to remove the slimy fluid.
3.       Boil the cocoa yam until it is soft then remove the back and pound with mortar and pestle until it is smooth. (It would serve as the thickener)
4.       Put the already cooked meat on fire, add 4-6 cups of water, add the ground crayfish, washed stock fish/dried fish, add red oil and allow it to boil for 10 to 15minutes.
5.       Add a cube of maggi, salt and pepper to taste, the washed snails, stir, add the pounded cocoa yam, ogiri and allow dissolving, (should take about 10 minutes)
6.       Then add the uziza leaves, stir and allow to boil for another 2 minutes before adding the fluted pumpkin (ugwu leaves). Allow simmering on low heat for 3-4 minutes and we are done.

Now our yummy and delicious soup is ready but note: for thickening you can use ofor or achi as alternative thickener, in case the soup is not thick enough with cocoyam you can add a spoon or two of ofor or achi to make it thicker.

You can serve ofe owerri soup with any solid food of your choice (eba, pounded yam, semo wheat or fufu). Make time out and try to prepare it, you will enjoy it.
