How to prepare EGUSI SOUP with vegetables

                                                           



Egusi soup ,also known as Obe Efo elegusi/ Ofe Egusi, is a delicious Nigerian soup that is made with grounded melon seeds and enriched with vegetables, assorted meat, fish and spices.
Egusi soup can be cook in different ways, it depend on how you want it. It can be cooked plain without adding any vegetables or with bitter leaf.



Ingredients:

- 1 cup ground Egusi (melon seeds)
- assorted meat (tripe/shaki,beef, chicken, cow's skin/ponmo)
- assorted fish (stock fish, dried fish)
- Fresh fish (optional)
- vegetables (Spinach leaves or Ugu)
- 1 big sized onion bulb.
- 1/2 cup palm oil (2 cooking-spoonful)
- 4 fresh tomatoes
- 7 fresh chilli pepper
- 1 teaspoonful ground Crayfish
- 1 tablespoonful thyme and curry(optional)
- 2 cubes of maggi
- 1 teaspoon of locust beans(iru)
- Salt to taste

                                  Preparation
Step1: Grind the egusi seeds until smooth, put in a bowl and dissolve with a little lukewarm water to form a paste. this is to reduce burning when frying the egusi.

Step2: Slice the vegetables and set aside.

Step3: Blend the chili pepper and tomatoes and set aside

Step4: Wash and season the assorted meat and fish with sliced onions, one cube of maggi and salt to taste. Cook until tender and set aside. Reserve the meat stock.

Step5: Heat up the oil in a pot. Add the dissolved Egusi paste and fry, stirring continuously to avoid burning, until the soup begins to thicken. Fry for about 15 to 20 minutes or when you notice the oil rise to the top of the egusi.

Step6: Add the meat stock, mix thoroughly and leave to boil for 10 minutes.

Step7: Add the blended pepper and tomatoes, crayfish, stock cube and the cooked assorted meat & fish and cook for 10minutes.

Step8: Add the fresh fish and cook until the fish is done.
Step9: Then, add the sliced vegetables and salt to taste. Simmer for 5 minutes and the soup is ready.

Enjoy your meal with pounded yam, eba, fufu, amala, semolina or any solid food of your choice.
