HOW TO PREPARE FRIED RICE



Fried rice is a very delicious and nourishing food but it takes a whole lots of time in preparation, due to this many family who would have love to eat this food frequently has made it festive kind of meal or for parties(owanbe) only. It would worth it, if we give out time to often spoil ourselves with this special meal.

Today am going to share with you how I love to prepare my own FRIED RICE. I have met with friends who have different ways of preparing their
fried rice.  

INGREDIENTS:

For a serve of four-
  • 6 cups of White Rice
  • 2 cups Liquid Stock [Turkey stock or Chicken stock]
  • 3 tbsp. Curry Powder (For Colour)
  • Seasoning cubes to taste
  • Salt to taste
  • 4 cloves Garlic
  • Vegetable oil
  • 3 medium sized Carrots
  • 2 large Green Capsicum (Green bell pepper)
  • 2 bulbs Red Onion
  • A handful Green Beans
  • 200g Cow Liver

Preparation of the liver:

-Wash the liver thoroughly with water cut into 2 or 3 pieces. Place the diced liver in a small pot, season with salt and steam for 10 minutes. Allow to cool off, then dice into smaller pieces and set aside.
-Preparation of the vegetables
-Scrape the back of the carrots, Wash and dice.

-Remove the seeds from the green bell pepper, Wash and dice.
-Wash and steam the fresh green beans with a little salt to taste.
-Wash and chop the Onions.
Set the veggies aside.

Preparation of the Curried rice:

-Put the rice in water add 2 tsp of curry (this will give it colour from the start) and parboil for about 10mins. Cooking for this short period of time ensures it doesn't get too soft before the preparation as well as removes some of the starch to prevent it from sticking together. Wash and rinse with clean cold water.

-Place the washed rice in a pot and add the Stock (I used turkey stock for this). Add some water, Curry powder (For color and taste), Seasoning cubes, Salt to taste and garlic. Cover the pot and leave to cook till the liquid in the pot dries up leaving the softened and curry tasting rice .

FRIED RICE PREPARATION:

  1. Heat the vegetable oil in a large pan.
  2. Add veggies (carrot, green pepper, peas, runner beans, onions) and stir-fry for about 1 minute. Add the liver and stir-fry for 2mins. Add the rice and stir to incorporate the mixture and turn off cooker.

 Fried rice is ready to be served.
