Moin Moin(beans cake)recipe
Moin Moin, is a dish made from beans. It's highly nutritious. It is very rich in protein.
Serve of four
- 4 Boilled egg (optional)
- 21/2 coking spoon of palm oil or vegetable oil
- Cooked fish/sardines
- 1/2 Clove garlic/ginger
- 60g shrimps (optional) or dry cray fish
- 4 Fresh tomatoes
- 6 Small chili pepper
- Maggi and Salt
PREPARATION
Step 1: Soak the beans for not longer than 30-45 mins wash and peel off the brown back of the beans by rubbing the beans with your pamls until it becomes white then wash thoroughly, be sure to remove all the brown peels.
Step 2: Wash the beans till all is clean and white, add the washed onions, cray fish, chili pepper, tomatoes, chopped small garlic and a bit of ginger, blend all together.
Step 3: Boil the eggs, shrimps and fish.
Step 4: Add 21/2 table spoon of palm oil or vegetable oil and seasonings like maggi and salt then stir, taste to make sure the seasoning is okay.
Step 5: Sliced the egg and shred the fish, make sure to remove the bones.
Step 6: Rinse the leaves/sandwich bag/aluminium cups, fold the leave into a cone brake the bottom to avoid leakage, pour grounded beans, add few shrimps, fresh sliced eggs and wrap the leave. Continue till all the grounded beans is finished.
Step 7: Put water into a cooking pot and add all the wraps inside, cover to cook for 30mins.
Step 8: Open one wrap to check if cooked and solid.
Note: you can use aluminium cups or sandwich bags instead of leaves.Make aluminium cups by cutting open cans of condensed or evaporated milk.
Serve with custard or pap(ogi) or when throwing a party serve alongside joloff rice.
